    I LOVE MISO.. I currently have one thats almost 2 years old, aging at room temp in the fermentation station! It smells like chocolate in a way. whats your favorite thing to do with miso???

      My friends swear by miso soup as a hangover cure, I on the other hand can't stand the stuff. I have to move to the end of the bench at our Sunday afternoon sushi 🤢

      I have a really lovely homemade miso that was given to me by a family friend, and I’ve done a lot of cooking with it. To be completely honest though, my favorite way to have it is mixed into a little butter and poured over popcorn!!

      leading me to an existential question, I lived in France south and north, in Ireland and now in Taiwan, room temperature and humidity... varies, Here now I have a kitchen that runs at 30 degree Celsius minimum when I am not cooking and about 70% humidity... that cannot be what you call room temperature...

                                              Answered my question perfectly: YES I should keep Miso around 24/7. I've been working on perfecting my own noodle broth recipe and miso is definitely the one thing I've been missing. Now I can finally make miso soup the way *I* like it.
