                              Just made a batch (about 13 pcs giant-sized muffins 😋😋) and they were awesome. Had to use more flour though (dough is still super sticky) because I live in a humid country. First attempt at English Muffins and succeeded too 😃👍❤❤.

                                                                                  I made this recipe for my wife and I. OH MY! They are so good! The buttermilk makes all the difference. You are correct about the dough being wet and therefore sticky. My biggest challenge was getting the dough from the baking sheet to the pan for the frying stage. The dough just wanted to stick to the parchment paper something awful. two spatulas did not seem to help. I probably didn't use enough cornmeal. SO, I'm thinking next time I will use my kitchen scissors to cut the parchment into 6 inch squares and then use each square to transfer the dough to an electric griddle. I'll gently lay one edge down and sorta roll it onto the surface. Then I can just ... hopefully ... peel off the paper maybe with the help of a thin spatula.

                                                                                  Also, what would you think of using say 1 cup of whole wheat flour in place of 1 cup of the bread flour? How about hydrating 1/3 cup of wheat berries and incorporating those?

                                                                                        Just finished making these. They came out great! Only difference is I melted a mixture of butter & oil in a cast iron skillet and cooked them on medium till nicely browned on both sides then, off to the 350 oven to finish the cooking process.
