"this is the Canadian bacon you'd want to serve to the Canadian in your family"
And we would call it back bacon and think you're weird for saying it's Canadian.

Also, what you call English bacon is what most people here call 'peameal' or 'back' bacon.

Would the pork loin slices work okay in a dry cure? Cure and slice? Or slice and cure? Gonna have to ask Google.

Next loin we get I think I'll give it a try.

In Canada, we call it "back bacon" Americans call it "Canadian bacon" we call normal, traditional bacon (the first kind he reviewed) "bacon"

This is not a valid comparison.

Bacon is an incredibly over priced item. And the quality just sucks.

People in the US really should consider boycotting bacon. Commercial bacon I mean. Instead, buy pork bellies and make your own bacon.

Or if you are lucky, have a GOOD butcher nearby. My butcher makes this double smoked bacon, often I do not bother to have him even cut it, that is uncured (since curing is largely a conceit and unhealthy). It is far superior to any brand name bacon and actually good for you. It is cheaper than store bought bacon.

The point is that price is a poor measure of quality. Expensive bacon is often of low quality while the best bacon, made yourself is cheap as hell.

Bacon used to be a way of preserving meat. Today, it's not a stretch to say that function of it is obsolete. Instead, what you really want out of "bacon" is a marinated pork belly that is smoked. Such a thing is cheap to make, should be easily available commercially but is not.

If said bacon expert wants to impress me then make exquisite smoke pork belly products available via shipping at a high but not insane price point. $10 to $15 a pound. More than that you are either ripping people off or spending money on stuff that does not matter.

Bottom line, more than that and I tend to make my own bacon 30 pounds at a time.
