Baking the crème caramel in a water bath is key for achieving that barely set, dense, and luscious consistency. And the lemon juice will help prevent your caramel from crystallizing.

                            You can steam the custard and it'll have the same effect as putting it in a water bath. This makes it easier to cook the custard.

French girl speaking : I'd say the difference between a flan and a creme caramel is that the flan contains some thickener such as starch so it's way more "dry" and thick than a creme. For example you can hold a piece of flan in your hand to eat it (usually they have a layer of dough under) but a creme caramel needs to be in a plate and eaten with a spoon! This is for the french flan but I know there is so many ways to make it

                                                                                  If you don't want to get all the holes in the crème caramel, you should try lowering the heat to around 200 degrees instead of 325. Would of course have to cook longer, but imo it looks way better.

                                                                                    Gaby didn't want to embarrass Carla on camera, but that was a horribly executed creme caramel. All those bubbles just ruins the texture. Notice how they didn't even want to show a close-up of it at the end? Don't follow this recipe. BIG THUMBS DOWN.
