  • Join Molly Baz in the Bon Appétit Test Kitchen as she makes a burnished basque cheesecake. This cheesecake is the alter ego to the classic New York–style cheesecake with a press-in cookie crust. Inspired by a Basque version, this is the cheesecake that wants to get burnt, cracked, and cooked at high heat. Which also means this is the cheesecake that’s impossible to mess up.

    If you’re looking for an extra light ‘n fluff burnt cheesecake with a real good jiggle, then you’re exactly where you need to be. Also, apparently Bon Appetit just caught wind of the mannequin challenge so....there’s that to look forward to.

      Ooooh, can’t wait to adapt my German cheesecake recipe to this. We add no butter - just quark cheese (which is fermented - so Brad and Molly crossover episode coming?), yoghurt and cream, and we beat the egg whites and stir them under really carefully.

      I don't have a springform pan anymore, do you think the parchment layers in a conventional 10 inch round cake pan would be adequate to support it?

      I clicked the recipe ,and i don't know what is 2lb of cream cheese ,.and the cups measure also 400 deg is in Fahrenheit right? Omo😅 thought it would be written in grams or millimetre .

                              I made this cheesecake several times already and it's literally the easiest cheesecake/cake I've ever made and still sooo impressive and so delicious! ♥ The only thing I changed is that I did half white half brown sugar and I felt like the brown sugar complemented the burnt flavour really nicely.                                   Oh wow this looks amazing and simple? Like I'll probably try this myself. No hand mixer though, or any mixer, so I'll probably end up mixing all that by hand, but all of it looked pretty easy.

It's cooling off now and I tasted a little piece....i should've tasted it while whipping it up but so far I'd say it needs more sugar. Maybe 2 cups instead of 1.5
