  • We urge you: don’t skip the marinade step—it really gives the shrimp lots of garlicky flavor and sets this apart from other scampi recipes.

My kitchen motto: The road to success is paved by mistakes well handled. That's why we keep the mistakes in the videos. So, if you ordered angel hair, it's okay! Just tell your server you made a terrible mistake.

I am getting my apartment back at the San Antonio Housing Authority. It is a neighborhood building for the elderly and disabled and I really want to turn it into a cooking community. Unfortunately, San Antonio is filled with steroids psychos that force kids into Military weddings and they are trying to cut budgets to force useless computer programs and schooling into our voices. Oh well, cooking is healing!

Nice ref to "back in the day" (late 90's-early 2000's) of the Food Network, when it was worth watching; now it's just "entertainment" ??? Not, unless you find some spikey haired little guy going all over the place feeding his fat face entertaining!! Not! Yeah Two Hot Tamales, Emeril, Good Eats, Jamie Oliver, Mario, etc. etc. Miss them, but some good stuff like here at least. Thanks Carla!! One thing, I do take the tails off in a shrimp dish like this, but not for "finger food" shrimps!! Choke risk otherwise!

IMO shrimp should always be cooked with the shell on. That shell makes a flavor packet of goodness, protects the meat, and adds even more flavor to the meat. Never cook shrimp without the shell!!

Can't tolerate the winey voice on this person presenting this recipe in such a nonchalant cooking manner. What a wreck. Her campiness is so overbearing. Just teach the recipe. The recipe is not "super winey" But she is. Cook, don't mess around!! YM

7:20 Pop up note: "Cook time will be faster if you use room temperature butter!" But I've seen so many recipes and cooking demos where they say to use cold butter because that helps the emulsification process. I hate hearing conflicting cooking advice! Which is correct?

Also, I love angel hair pasta! It is so much lighter than regular spaghetti or linguini. You're entitled to your opinion, Carla, even if it is wrong. And if you had cooked up some angel hair you'd have had pasta starch water to add to your too-oily pan sauce instead of tap water. So there.

My sauce was dark brown and oily? I tried the water; I have the same small prep bowls for the water, so I copied the video but that didn’t seem to help? I followed the exact steps you did on your video. I don’t have stainless steel pans, so I used my nonstick granite pan. Can you tell me what I did wrong? The dish tasted good but didn’t look as great as yours. Love you video. I’m a new cook.

Best shrimp scampi is made with butter parsley garlic lemon. That's it but it's only my opinion. A slight dusting of paprika on the shrimp after it is plated is a nice touch.

Huh. Imagine that. From every shrimp scampi I've ever had in a restaurant, I was led to believe it was simply shrimp in a garlicky oil. This looks so much better.
