Andy Makes Pasta with Bolognese Sauce | From the Test Kitchen | Bon Appétit

  • Join Andy in the Bon Appétit Test Kitchen as he makes BA's very best bolognese. It doesn’t take a lot of ingredients (or a lot of money) to make a classic Bolognese recipe. What it does take, though, is patience for the sauce to achieve the ideal authentic texture. You’re going to go low and slow—it’ll take around 3 hours, but most of that cook time is hands-off.

                I will try this recipe with white wine and chicken broth but no milk... maybe substitute almond milk and use half beef and half ground pork with the panceta.

                        Oh nooooo! This is so wrong! All the Italians are cringing. This is absolutely not a Bolognese sauce. Why did you named it like this if you don't actually apply the recipe of Bolognese sauce. Say that is an interpretation or US version of the Bolognese sauce. It's like making a cheesecake and calling it pancake. It seems delicious though, but it's not a Bolognese sauce :)

                                      1 Celery Stalk
                                      1 Small Carrot
                                      1 White Onion

                                      3 Ounces Pancetta Sliced then Chopped
                                      1 Pound Ground Lean Beef
                                      3 Tbsp Olive Oil
                                      Salt & Pepper

                                      1 Cup White Wine
                                      1/3 Cup Tomatoe Paste
                                      1 Bay Leaf
                                      1/4 Tsp Nutmeg
                                      (Ground Nutmeg or Fresh)
                                      1 Tsp Salt
                                      2 Cups Chicken Stock
                                      1 Cup Whole Milk

                                      Shredded Parmesan Cheese
                                      1 Pound Pappardelle Pasta
                                      (Rigatoni also works)
                                      1 Cup Pasta Water
                                      Add Salt to Taste

                                          pro tip: before putting in wine, make sure pot is hot and inside stuff is scraped to the side. when you add wine it should swushhh, trust me it will taste better.

                                                This recipe was a big success !! Kudos !! Now, every time i'm doing it i cook enough to also keep in the fridge so i have ready for the next time, or for some unexpected guest.

                                                  My friend, unfortunately I have to tell you that in all the recipe you've done the only right thing to save is the bay leaf.
                                                  I'm sorry for that excellent pasta and for the parmesan you've wasted with that ignoble sauce you managed to create.
                                                  The recipe is wrong instead.
                                                  Nutmeg should not be put, I do not understand the reason to blend the vegetables in that manner (absurd). The beef balls do not make any sense, in fact they are just wrong, because inside the meat remains raw (while the recipe calls for cooking the meat until it completely loses the liquids). Chicken broth and milk ??? We want to talk about it ???? There is some milk, but the cooking must be very long and the milk is used to counteract the acidity of the tomato cooked for a very long time.

                                                  In short, the recipe is really all wrong.Che Dio ti fulmini.

                                                                The sauce looks dry where's the drizzle of olive oil. His appearance is horrible, he could have found a decent shirt to wear. That makes people not want to eat your food.
