Andy Makes Pasta with Bolognese Sauce | From the Test Kitchen | Bon Appétit

  • Join Andy in the Bon Appétit Test Kitchen as he makes BA's very best bolognese. It doesn’t take a lot of ingredients (or a lot of money) to make a classic Bolognese recipe. What it does take, though, is patience for the sauce to achieve the ideal authentic texture. You’re going to go low and slow—it’ll take around 3 hours, but most of that cook time is hands-off.

                                    As an Italian he misses the point of the soffritto - it’s always in the pan first with the oil to give the oil TASTE and set the tone of flavour. After that that’s when you add the meat and so on. The order he has put everything in is wrong and yes it makes a difference to the Italian way of making pasta al ragù (bolognese) sigh

                                          Secret ingredients:
                                          #1 10:40 waters boiling 10:50 "about 2 hours later" waters still boiling. That water's the secret to the sauce.

                                          #2 2nd secret ingredient is the holes in his shirt.

                                                Please, no milk on the ragu, for God's sake. And don't process the carrots that much either, leave them a little chunky. The sauce looks like a pumpkin soup, for crying out loud.

                                                                      Honest Italian comment:
                                                                      - blending the veggies is completely unnecessary just stir until they get golden
                                                                      - We don't use pancetta we use sausage, the recipe is already greasy its unnecessary to add more fats
                                                                      - Bolognese is probably the only one pot italian recipe.... First stir fry the veggie then add the meat and finally add the tomatoes. Easy peasy
