          A little.

But the car exhaust you breathe constantly is orders of magnitude more carcinogenic, and you breathe in orders of magnitude more of those carcinogenic molecules from the exhaust in a day than you would eating this multiple times a week for a year.

If you're not absolutely terrified about all the cancerous, poisonous, radioactive elements (including uranium), and multiple heavy metals like mercury that we get from fossil fuels, I wouldn't worry too much about the char.

I did it, however using that technique it stil does not cook the cabbage all the way through, which is not a big deal. Ideally I will simply this recipe by cooking in a cast Iron for just five minutes to get the charting, another 5 for the basting then throw it in a 350F oven for 25 minutes and the cabbage is cooked.
