        I love that Carla leaves in the cracked omelette because isnt that how most omelettes come out anyway. I run around the house showing everyone the pan if I get it to flip over without the inside seeping out of the folded part. A good nonstick pan is a godsend in these cases but timing and a good ear all play a role. I love the realness.

          She would hate how I scramble my eggs. First, screaming hot pan, second butter, third, crack eggs straight into pan and use spatula to scramble them as they cook. Quickest and least dirty dish method I've found. Gets the job done.

              Chef of 20 years here; if your egg tastes like vinegar, you did it wrong. You're supposed to move it to a pot of fresh boiling water to rinse and finish cooking the egg, as soon as it's together enough to move without breaking.

              How are you in a test kitchen but don't know this, when it's literally the proper way taught in every culinary school with proper credentials in the culinary world?

              Don't get me wrong, I love ALL of this channel - but that is as entry level as it gets for a professional cook, or chef...

              And don't get me started on her overmixing of the scrambled - and pre-salting which makes them tougher( :/ and after correctly stating that dairy in the beggining will make them tough... )

                                                                                      Regarding poached eggs and vinegar, Carla is absolutely right you do not need the vinegar. However, you do need FRESH eggs if you want the vortex to work without it.

                                                                                        To perfectly roll your French omelette every time, do not try to flip the egg like you did. Lift and tilt your pan then gently begin to roll the egg from the top of the pan to the bottom, gravity will do its job and it will roll beautifully every time.
