  • Bon Appétit Test Kitchen Manager Brad Leone is back for episode 38 of “It’s Alive” and this time he's making beef jerky. Join Brad as he walks you through cutting, seasoning, and dehydrating two flavors of jerky.

    The Old Timer:
    1¼ lb. eye of round beef
    3 Tbsp. pure maple syrup
    ¼ cup Worcestershire sauce
    1 tsp. garlic powder
    1 tsp. onion powder
    1 tsp. kosher salt
    1 Tbsp. drained capers
    1 Tbsp. caper liquid
    1 tsp. chili powder
    ¼ tsp. cayenne pepper
    ½ tsp. dried oregano
    1½ tsp. Tellicherry pepper

    Bringin’ the Funk:
    1¼ lb. beef
    10 dashes fish sauce
    2 Tbsp. honey
    3 Tbsp. soy sauce
    3 garlic cloves
    1 Fresno chile
    1 1" piece ginger
    ¼ cup gochujang
    ¼ tsp. Chinese five–spice powder
    Sesame seeds (for topping)

            horrible advice. storing not completely dry jerky in a sealed container will increase the chance of infections and greatly reduce shelf life. putting still moist/warm jerky in a sealed container will cause condensation on the inside and the jerky will rot very quickly

                                      Dood! Please make some Biltong. I promise its going to be good! Us South Africans looove our biltong to go with watching ruggas. Its cured meat rather than dried. Leaving it up to you to find a recepe on google and how to make it. Plenty recepes out there. Good biltong has a strip of fat intact and thinly sliced, some corander and other spiced embedded and still a little wet. Not too much and not too dry.

                                                                                  Brad, you have to try make (or just eat) South African dried meat, Biltong. Thicker cuts and totally air dried. No worries around the fat going rancid either. In fact fattier biltong is often preferred.
