      I have been making fresh Tortillas for most my life. Which is a very very long time lol. I hate the store bought. Many store chains freeze their tortillas and then leaving them on the shelves 😱🤢. It’s Amazing how many Gringos think Tortillas are supposed to be the way store bought ones are😒.

        These are Nachos. I’m sure they’re delicious but if I ordered Chilaquiles and got these I would be really disappointed. There something about tortillas that are crunchy and soggy at the same time you can eat with knife and fork that these just wont do.

                    I had some this morning. They are so good. My fiance made them. Green sauce two sunny side up eggs Tortillas onion some other stuff I can't think of and queso fresca cheese which is so good a long with some mexican sour cream. The sour cream that she got is so bland tasting on its on. I like the mexican sour cream with the green cap.

                        Those are NOT chilaquiles. Those are American nachos with salsa verde and some chicken with cheese . Chilaquiles chilaquil significa "Metidos en chile" meaning you need to cook the totopos (tortilla)with the salsa to create the texture of chilaquiles . If not,you’re just making nachos chef!

                            Rick, ¡estoy tan feliz de que me expliques cómo se supone que deben ser los chilaquiles! Son mi plato favorito para comer en el desayuno del sábado por la mañana (revelación total: me encantan los que hace Trudy) con frijoles a la charra.

                            Afortunadamente, HEB hace tortillas que, aunque no son como las tortillas de mamá en casa, son lo suficientemente buenas como para cortarlas y hacer trozos de chilaquiles que no te da vergüenza servir en casa.

                                    He complains about the broiler, but at 9:28 it clearly shows the rack is in the center of the oven. To broil, you need to place the food 3"- 5" from the heat source, so the rack should have been closer to the element!

                                                        I think those are nachos with mexican ingredients. Never seen chilaquiles (dry or moist) without red or green sauce. This is not a classic home or restaurant recipe, but well, there's a lot of distance and cultural diversity. I would like to know how he learnt his recipes.

                                                                                            Title says "Classic Chilaquiles" but this is far away from real mexican chilaquiles. This is more like tex-mex nachos. "Melted cheese" is a completely US american concept. That's not how you chop tortillas for chilaquiles, totopos should be covered by the sauce, you do not broil chilaquiles... Sorry, this is bad.
