      The reason the can gets cold after being used is due to a process known as adiabatic cooling, a property of thermodynamics. A gas, initially at high pressure, cools significantly when that pressure is released.

      The reason the canned air is cold is due to a thermodynamic principle called the Joule-Thomson Effect. Basically, the canned air is sitting at room temperature at high pressure. The air inside has a certain amount of thermal energy. When the gas is released it expands, and that thermal energy is suddenly spread out over a much larger area, causing the temperature of the released air to drop. Think of it like taking a stick of butter, and spreading it out over an enormous piece of toast. That liquid on the chocolate may have just been condensation from the air, i.e. water. It's still not a good idea to use it though, many canned air products contain bitter additives designed to discourage people from using them as harmful inhalants.

      08:30 I use canned air in an IT environment...you cannot spray straight down or you get the white frost like gas coming out. The can needs to be help up right when sprayed

          I love Chris, but if you tempered the chocolate it wouldn't melt in your mouth properly to go along with the peanut butter the way it should.
          MY favourite version would have more chocolate though. Reese's focuses so much on the peanut butter, it seems; but it's supposed to be chocolate WITH peanut butter, and they ignore the chocolate.

                      its not tempered because its most likely not couverture? Vegetable oils stabilize it so it doesnt bloom, sets up relatively well, etc

                        I make reeses cups all the time. I just take a bag of milk chocolate chips, melt 2/3rds of the bag in the microwave, then stir in the left over 1/3rd to “temper” the chocolate. Make sure the melted chocolate melts that 1/3rd cause if you put it in the microwave again you’ll lose the tempering. Then brush a flexible cupcake pan bottoms with some of the chocolate, then put my peanut butter filling, which is basically just peanut but, powdered sugar and course salt, then pour the rest of the chocolate over that in each cupcake dip, then wobble the flexible pan so the chocolate gets around the peanut butter and smooths out, then refrigerate to quicken the harden of the chocolate, but you dont really need to. I use a peanut butter that isnt so sweet because the powdered sugar might be overload.

                                                      Canned air isnt food safe at all, it has a very strong bittering agent and can cause frostburn if you get it on your skin. Never hold it sideways or upside down. If you sprayed chocolate with it it would taste like vomit.

                                                                The air is fine... it's just nitrogen inside the can... use a half empty can of air not a full one. You wont get the gas shooting out.
