Carla Makes a Salted Caramel-Chocolate Tart | From the Test Kitchen | Bon Appétit

  • Join Carla in the Bon Appétit Test Kitchen as she makes a salted caramel-chocolate tart! You can use a 9" or 10" tart pan, but the layers will be thinner in the larger pan. We also found that Morton kosher salt won’t dissolve completely in the caramel filling, so use Diamond Crystal for the best results for this tart recipe. Then, a generous sprinkling of flaky sea salt before serving brings out the flavor of the chocolate and tempers the sweetness of the caramel.

                            I want to make my own caramel but I can't find heavy cream in my grocery store (maybe I'm not looking in the right places?) all I can find is heavy whipping cream

                                            pro tip.

                                            Take a food processor. put the blade in the freezer for half an hour, put the butter in the freezer for half an hour, pulse them together in quick blitzes for 10-20 seconds, skip the first quater of this video.

                                              I finished my BA in Culinary Arts 13 years ago, there's nothing grounbreaking about using salt in desert, with chocolate, or caramel, or both, in the last 400 years.

One of my personal favorite videos from the Bon Appetit test kitchen is the cheese journey Molly and Carla embarked upon. The sisterly bonding was a delightful complement to the final conclusion of their collaboration.

                                                          I saw this and had to click cause I was like wait... didn't Claire make this??? and then the video starts and just aaaaaaaaaa glad I wasn't going crazy lol. I've never made the actual tart as a whole but I've made the salted caramel and the ganache individually to use them for a cake I was making and they were delicious!!! It was my first time making caramel and it definitely found a place in my recipe binder!!!

                                                                                          Maybe you have ‘hot hand’ or your kitchen temperature is too hot so the butter melt (?) OR in my experience just adjust the recipe a little bit by adding more dry ingredients to the point it’s not too wet and you’re comfortable working with the dough. Pie crusts is almost a fool proof recipe, you’re not going to ruin it even though the consistency is not exactly as shown in the video. Hope it helps
