      Brad, I made this last week with veggies from my garden and it's so delicious! I've been putting it on everything. Also, I used purple cauliflower which turned the entire contents hot pink, so it has been giving all of my food a festive flair. Thanks for the great recipe!

      This might be a Chicago thing but I've always heard it called, "jardineer" It's spelled the same but you just don't pronounce the, "a" at the end.

                            For anyone that has the jar with an airlock but doesn’t want to buy the weights, don’t worry. You don’t need them. As it ferments, the CO2 will displace the air in the jar and after a while there will be no more oxygen in here. It will happen before the veg has a chance to get mushy.

                                                                                      Giardiniera is a popular condiment used a lot in Chicago. The giardiniera is always packed in oil. Have you tried it this way? I’m unsure but, my guess is that after it’s fermented the liquid is drained off and oil is mixed in. The oil adds a nice texture to the veggies.
