        The fresher the egg, the less loose white you have, which is what you're straining out. As an egg gets older the loose white gets bigger.

                                                        Because you dont have to worry about the process of cooking the poached egg. Which can be stressful/hit or miss. Especially while keeping up with the English muffins/hollandaise. I personally dont use her method. But, not only is it without a doubt easier it guarantees no mess ups with the egg.

                                                                            If you add white vinegar to your poaching water it will help the egg whites coagulate around the egg yolk helping it from over cooking and not looking like a hockey puck. Also always season your poaching water with some salt. It just makes sense.

                                                                                  was this molly's first video or something? the peanut gallery of the comments section seems to imply that. - also, used to cook brunch, eggs benny and poached eggs was super popular, wish i had this trick up my sleeve back then, would have made the hectic rush much easier if i had a bowl of cold soft poached eggs waiting to be ordered. damn!

                                                                                    Not trying to put too much of a dark slant on things but if this lady was to disembowel a rabid Chernobyl crossbreed I would no doubt be as transfixed and enchanted by her adorable manner, in working through such a gruesome process, as I have been with every one of her other video offerings.
