        Can I use pecorino instead? My family never buys parmigiano reggioano. I'd rather make this with ingredients I already have instead of buying more

                    Ahhh I'm so happy I'm on a bon appetit binge and came across this video cuz I went to Italy earlier this year and tried this dish and it was one of if not thee most delicious pasta I've ever had. Now I'm gonna make it myself!

                          I could NEVER knock anything that involves pasta, lemon, cream & butter....this is a marriage made in heaven...oh and fresh parmesan too!!                                           Can confirm -- this dish is delicious and easy! Can also confirm it really doesn't microwave well! Despite best efforts, it is predictable that the butter emulsified in the sauce seperates and melts away, leaving behind a yellow puddle at the bottom of the bowl. Make this recipe for the family or for a dinner party, don't plan on leftovers!

                                            is there a way to make a vegan "beurre monte"? i thought of using coconut milk instead of the cream, but what would be a good substitute for the butter to get a similar effect?

                                              I think that the butter is used to thicken the cream, so if your substitute is already pretty thick then you probably don't need anything to play the butter role here. But, also -- this dish is like 70% dairy. You may have better luck getting the right flavor of this dish with an olive-oil based lemony pasta sauce!

                                                                If anyone wants to make this vegan it's super easy. Just use vegan butter and the pasta water as a base for the sauce. The starch in the water combined with the butter along with some vegan parm will make a nice cream sauce. I would also recommend sweating some chili and garlic in olive oil for the sauce it will bring this to another level

                                                                                I've done this sauce 3 times now. I followed Molly's recipe the first two times, the third time I added sliced garlic and butter to the sauce and it was heaven. Next time I'll finish it off with some chopped fresh parsley. I really recommend trying this recipe to try and then another time with garlic. You'll never go back.

                                                                                    This dish is LEGIT. Made it for our girls “dinner en blanc” and it was a hit. I did make extra sauce and set it aside so it could be poured over the pasta once on plates.
