                                *Need advice*
                                I want to make this recipe with salmon steaks instead of filets. I don’t see why not but I would like some outside input. I was thinking about cutting the steak away from the main bone in order to simulate the same size as the filet. Thanks!

                                  I wouldn't bother with cutting the bones out. They will be jucier, which is a good thing. You can prolong cooking time a little. When your steakes will look as those fillets - you take them out of the oven

                                                          Great recipe, but just one thing.. He said yuzu juice but used sudachi juice, which is a different fruit. Yuzu has more floral fragrance compared to sudachi, which has sharper and more vibrant sourness. I do think yuzu, especially yuzu zest would be better for this recipe, but they don't make packed yuzu juice cause the scent is so delicate it's hard to preserve it. So over all great choice, Chris!

                                                                                  So this isn't creating "sushi grade" salmon that is still raw and fresh, right? It's still cooked? I've been trying to locate sushi grade salmon and/or figure out how to make it so I can make salmon bowls at home. I'd really appreciate the clarification and guidance from anyone who knows, thanks!

                                                                                    The salmon here is cooked under a broiler for 4 minutes. If you need sushi grade fish, you can go to any Japanese store, or maybe talk to a fish monger that you trust.
