        I get confused with chefs on yt. Some always say to not use evoo with high heat. If it smokes it has went bad and has free radicals. Others say get the pot ripping hot and use evoo and its ready when it smokes.. what gives? I mean, can i use it with high heat or not?? Honest question here

                              Everyone worried about 1 pasta. They waste a lot more than that im sure, it's a test kitchen. Sometimes things don't turn out right and they are thrown away. They compost so that's what happens to a bad test recipe. Chill on a single pasta.

                                  I made this and I think you can really brighten this dish up by adding in fresh thyme leaves towards the end of frying the mushrooms and stirring in a generous amount of finely chopped fresh parsley at the end of cooking.

                                                    mine turned to scrambled eggs at the last minute :( left it on heat 2 to stay warm and it cooked. im scooping everything out and leaving the egg pieces at the bottom i hope the rest is cooked or we eating raw eggs for dinner. havent tasted it yet but it looks beautiful thanks molly love u

                                                      Throw away the white of the eggs and add water afterwards seems strange to me. Keep the white and everything is just fine for me. Doing Carbonara since a long time without feeling bad about egg white.

                                                                                      I know the point of this was meatless, but I made it with pancetta because I didn't have enough mushrooms, but I had pancetta in the fridge. And it was so good! First time I made carbonara that didn't scramble.
