  • We challenged chefs of three different levels - an amateur, a home cook and a professional chef - to make their versions of a hamburger. And then we brought in a food scientist to review their work. Which hamburger was the best?

      Don't medium rare a stores ground-beef... Just don't.... If you wanna do that, do as the 3rd level guy did for his beef. Or buy a single piece of beef and ask the butcher to ground it for you. You stand to get sick doing it with store made ground beef. Most the fat is added, from parts you wont eat, said fat is sprayed with ammonia to kill the bacteria for it was the aging crust most times. How many times you bought ground beef at the store, then the middle part was browning? yea that due to the nature of how they handle majority of ground beef with fat cuts. It is not safe to eat rare or medium rare.

                      Level 3 Chef: I first have to get my garden ready for planting, then I need to put the seeds in the dirt, then make a scarecrow to keep little animals out of my garden, I then will add some fertilizer to enrich the soil. then I need to keep pulling the weeds out every few days, and in a month or two, we will have our topping for the hamburger.

                        I have my own method and will be ignorant and ignore half of what these people do and the food scienctist at the end telling what I know lol,,,, a profession chef is the most unrealistic way to make a everyday burger but I get it. Emilie needs some lessons, non sick with butter, and bread crumbs because she thinks it does something maybe no. Lorenzo, uh close but flipping the burger more often and sooner like every 30-45 seconds will help. Unless you ground your own meat like the chef, grocery store bought meat should never be cooked and served pink, best to avoid getting sick. oh I also hate cheese, bacon, or mayonnaise but that is just me.... Well a brioche bun is nice, but toasted.. LEAN beef. Yes thinner patties in centre yes, even a dough nut hole. Cook over low-med for longer and flip often 30-45 seconds to seal in juices,,, then raise temp to brown for non pink burger (or even use a second pan or bbq grill to brown)... I also season my burgers with sage, thyme, summer savoury, celery seed but in the pan, salt and pepper at end to brown... all my pickles, tomatoes, onion(red or shallots), etc are thinly sliced, spring lettuce mix... fancy hot mustards, ketchup, or hot sauces are welcomed... but I also think the flavours should come from the sauce on the bun, be it a chutney or cheese, or mayo.... I do use a non stick type of pan, the copper kind or the ceramic looking one, but with non oil or fat unless using a second pan to brown. But try n create your own methods... mine work for our household.
