  • We’re throwing this pantry pasta all-star a “Welcome to Summer” party with peas and mint. This dish was inspired by Rolf and Daughters in Nashville, where chef Philip Krajeck makes a fermented pasta cloaked in a tangy whey and butter sauce. We use store-bought buttermilk to mimic whey’s acidic flavor. It’s a perfect foil for the rich butter and cheese in this glossy sauce.

      Grazie Molly, when I make pasta I use what I have. So I made bucatini with lentils, pecorino, salami and peas. I used the rendered salami fat to make the sauce. Don't use cream so I made a rue with extra olive oil and white wine - didn't want the pecorino to clump. Then I put in the cooked lentils. I used the crispy salami as garnish.

                                            Terrible combination, first I’d get rid of the peas cause it of sets the whole taste of the pasta, second why use leeks if spring onions give a better taste and would go perfectly well, third, the pistachio, Why? Why not use pine nuts, are you purposely trying to make a bad food?

                                              Mixing together two different types of oils that have different smoke points does not increase the smoke point of the oil or fat with the lower smoke point. Smoke points don't average out. The chemical composition of the material stays the same and therefore it will still burn at the same temperature.

                                                When I made it all of the leek kind of got stuck together. When it was in the pan before the pasta and peas were added it was fine, but when I started to stir it a lot it just kind of clumped together. Does anyone know why? Does anyone know how to prevent it?

                                                    This is a basically a pasta version of pea tartine and I love the idea of that transformation, especially how the buttermilk mirrors the tanginess of goat cheese yummm

                                                      Tried it. hmmm. Certainly let the Buttermilk reduce too much. Should have added some more of it. And of course i overcooked the leeks . Should have listened better . The Mint... In this dish not my cup of tea. Will use Basil next time. Maybe some lemoncest. I'll give it another try some summer day. love BAs Videos!!!

                                                                Whoever came up with this recipe should be tried for treason against pasta and Italy. 🤯 but I still would like to try it.

                                                                  Peas always go great with white and not red sauce pastas! Throw in some frozen peas in the boiling pasta water. You'll get your green veggies and it will taste spectacular with just olive oil, butter or cream sauce. It's a thing the ancients figured out long ago.

                                                                          I wish chefs would stop confusing 'browning' and 'caramelization'. They're not always the same thing. At 1:50 Molly uses both in the same sentence, but she only means 'browning'. To caramelize the leeks you'd have to cook them low and slow for about 40 minutes.
                                                                          I hate to be pedantic but if you're teaching people how to cook it helps if you don't confuse them.
