                                                          fermentation is a 'series of chemical reactions' ? excuse me? the yeast is digesting carbohydrates and thus creating co2 as leftovers (basically excretas)
                                                          yeast is a living aerobic fungus, thats why not place a yeast dough into the fridge, or use dried yeast, since most of yeast will stop digesting, or dies during the process of drying it.
                                                          fresh yeast is the only good solution to create a dough. you can get good results with fresh yeast within like 2 hours. no need for a 3 day dough.

                                                          however. this is NOT a chemical reaction. the yeast is doing all the work. fermentation is NEVER a chemical reaction.

                                                            a pro chef using dry yeast? i don't know about america, but over here in germany, you can guy fresh yeast cubes everywhere. doesn't take 3 days to make a good dough with fresh yeast
