  • Join Chris Morocco in the Bon Appétit Test Kitchen as he makes molten caramel cake. Everybody has heard of molten chocolate cake, so we thought we’d try to create a caramel version, with a toffee-ish tender cake encasing a runny dulce de leche center.

    I live in France, and I don't think I can easily find Dulche de Leche around. What are the best replacements ? Just a regular homemade caramel ?

        Because I'm accustomed to the dialect of Spanish where "dulce" means "candy" (as in like hard candies), when he said "Dulce" as an abbreviation of "Dulce de Leche", I imagined him pouring hard candies into the cake batter. It was a funny thought

                  Don't get me wrong, I love Chris Morocco, but for me it's pretty incoherent that a person with his serene, precise, critical and analitic attitude towards his job and others job, taking his time to speak and cristalize a thought, on the other hand, when he is explaining something he already has worked on, rushes and uses so much the word "like". It's unconsistent, eliminates that confident we see on other situations. Like if there where two Chris Morocco.
                  Love him anyways and will make this recipe some day. :)

                                            Ok so this fall I’ll be making different versions of this. I’ll use the caramel filling but will be making cake versions of apple spice, banana, carrot and pumpkin versions. Can’t wait to try them out!

                                                    Nope! Love the idea but you lost me with using dulce de leche. I’ve had it fresh from SA (the country side), I’ve had it jarred, I never liked the stuff. My family loves the stuff, it is their caramel like substance, mom can eat spoonfuls if I didn’t nag her about potential diabetes. But for me it was always a disappointed extremely sweet off textured like caramel. I know, I know everyone loves the stuff, but for myself no bueno 🤢. Love my culture but this is one thing I could do without. ✌🏼

                                                                          Here’s a suggestion for BA. Take a page from the rock and roll and blues cruises. Partner with one of the cruise lines and offer a “cooking with the BA Stars”. A couple of days of demonstrations and interacting with your “favorite” BA “stars”...good lord...license to print money. But, for this video...great job, Chris. This was killer!

                                                                                      I really love the idea of this recipe. Though it took me several days to finish this vid. I could not stand the way the recipe was presented. It was a simple recipe but it took 13+ minutes, with a store-bought dulce de leche. With the amount of video time, you could have made one. I am imagining the days you collaborated with Claire to what, prolong the video more? Beside Andy, what is with Bon Appétit vid presentors rattling off the whole set of procedures and then do each step anyway? Too TMI. An exhibition of your cooking knowledge than a celebration of the recipe and ingredients. Interesting recipes. Lousy writing. Horrible editing. Do something about this!
