Chris Makes Chocolate Chip Cookies | From the Test Kitchen | Bon Appétit

It makes them crispy-edged, chewy-centered, yet still rooted in classic cookie flavor. Oh, and no mixer required, so there’s no excuse not to make them.

      I did not take the advice to not crowd the baking sheet and ended up with a sheet of cookie. A tasty cookie sheet, but that's a lot of spread on these guys.

            I just tried making these cookies and THEY WERE AMAZING, but mine spread out a lot more than they looked here so they were just thin. I followed everything in the recipe but I wanna try the thicker ones, can anyone tell me what I should be doing to avoid this???? I'm thinking it may be the different ovens but mine is an integrated electric oven... pls help me

              Just let the dough rest for 30 minutes before baking. It’ll let the flour hydrate and you’ll have less spreading.

                  Just made these for my girlfriend and I. I love them!!! Next time I'll spend a little more time making sure the sugar is all dissolved in the egg. But I'm very impressed. Will make again. So rich and delicious. I let the dough rest for about 10 min before cooking and they didnt flatten at all. They look so pretty.

                                                      Great Video and great recipe. But i have a small issue here. Please save the Eggwhites (I am assuming chris threw them away, cause he put them into the bowl with the shells) for another recipe or whatever. You should not throw away eggwhites, just because you only need the yolks (at least someone in a professional kitchen should not;))

                                                            Chris, chill those cookies for an hour or two after you scoop them before you cook them. This will give a better texture. The chilling them solidifies the butter and that is really what gives you the chewy center but chrisp edges without all the spread yours has. It is the only step you are missing otherwise this is my signature chocolate chip recipe minus the brown butter.

                                                                  I have a question for anyone who can answer it.

                                                                  The first time I made these cookies I accidentally used salted butter and didn't brown it very well I also completely skipped on the salt which in the end worked out really well. The cookies looked exactly like they do in the video.

                                                                  I just remade the cookies with un-salted butter, properly browned it and added the salt. (This badder tastes heavenly) but this time around I had puffy cookies and I followed the recipe exactly.

                                                                  Can anyone tell me what I did wrong? Did I add less baking soda last time or is it just the luck of the draw? Both taste fine but I'm picky with how it looks.
