                  Try adding dry small curd cottage cheese to the cream. It is a national dessert in Latvia and it is called "Vecrīga" which translets to Oldriga. It is very good.

                                                If only they would use proper measures. So important especially in baking. There is no Stick of butter anywhere outside the US. The difference between a cup and c cup can be more than 30%. No wonder people are stiffening with recipes.

                                                                  The most encouraging thing about these videos is that none of them (except Chris's ) go perfectly. It's so REAL and endearing and makes me feel like even if I mess up a little, I can usually fix it!! That's why this channel has encouraged me to come up with my own recipies, make pie dough FROM SCRATCH AND BY HAND (which my mother and grandmother can't even do), and generally just really try recipes I never would.

                                                                    If you do happen to leave out the water in the dough, use the deflated cream puffs like dough discs and dip them in the cream - also tastes good dipped in chocolate

                                                                                  To anyone who is making this... I was too focused on following the recipe and not watching my dough so I added too much egg. It was a humid day when I made this so the dough was naturally more liquidity. Watch your dough and keep checking for the “V” shape. You DO NOT need to add 6 eggs. I added 4 eggs and it was too much!!!

                                                                                      I did it once with tapioka starch, worked great. The process was different though, everything went in the dough before cooking.

                                                                                        I can make this without issue. My question is how do I transport it without getting soft? I cooled the baked dough for 1 hr and transported it to a friend's place before filling with Earl Grey pastry creme. In the 30m drive they got slightly soft 🤦

                                                                                          Make sure to exhale through your nose so that powered sugar goes everywhere makes me think of 3:00AM at Cafe Du Monde and all of the drunks and the beignets and the powered sugar goes everywhere due to the laughing
